I made these cookies last night they did get a bit sticky while mixing. Once mixed it stuck to cookie scoop and my fingers very hard to get off. Now we only have olive oil in the house could this be why they were so sticky, also noticed they have a high olive oil taste should I use a different oil next time and which one. Whipped Shortbread Cookies - New Year Recipes

Very similar to a recipe I used to use. I find it’s more like 9-10 dozen though! I use salted butter and add about 1.5 tsp vanilla. I cook at 290 for about 25 minutes. You really must let them cool on the tray before removing. Also if your butter doesn’t turn lighter coloured and soft looking them your dough won’t pull together. If your dough doesn’t pull together your cookies won’t work. I made these for the Penn State University Blue and White football tailgate. I dipped them halfway in white chocolate and added blue sugar sprinkles on top. They look and taste great. Good recipe - easy to follow and ingredients are non-threatening/easy to find. A word to the wise. I'm not great with baking that requires complete attention. This does! The part where you cover you Oreo "meatball" in chocolate. A few hints: as you melt the chocolate, stir constantly and stop as soon as all of the stuff is melted - even a smidge before you think it's totally done. Use a slotted spoon and drop the cookie in and pour the chocolate over it. Move quickly or else the chocolate cools and it's like walking in quicksand. The toothpick thing didn't work for me and was discouraging in the beginning - despite chilling the stuff it didn't stay together and "muddied" the chocolate. The spoon method was much, much better. I have been known to cut the toast in half sometimes. Bake garlic side down with toppings and cheese for same degrees and time.
