I’ve made this cake on two or three occasions (my mom’s 60th/my 30th birthday, Easter…) and it has always been amazing. I’m a very skilled baker, but I am not a professional. There is a chance that I might be making my own wedding cake next year (depending on what venue we pick and if I can use it the day before the wedding, and on what facilities the venue has). We’re having a small wedding with around 50 people. Correct me if I’m wrong, but I think I’d need to make two or three tiers. In that case, what size baking tins would I need for each tier? Have you got the proportions for the recipe to hand? If not, I’ll calculate the recipe for the bigger tiers myself.
By the way, the only thing I do differently is use more champagne and put sliced strawberries between the layers. I don’t like pink, so I make a gold strawberry champagne cake instead. Everyone loves it!
By the way, we’re having a 1920’s themed wedding, so I’m going to try and decorate it art nouveau/Gatsby style.

INGREDIENTS

Cupcakes:
  • 6 eggs, separate whites from yolks
  • 6 teaspoons baking powder
  • 2 pinches of salt
  • 1 1/2 cups sugar
  • 1 cup of water
  • 3 cups flour
  • 1 cup oil

Champagne Icing:
  • 4 Tablespoons Champagne/ sparkling wine
  • 1 teaspoon vanilla essence
  • 4 cups icing sugar
  • 1 cup butter


INSTRUCTIONS

  1. First, Preheat the oven to 390 degrees Fahrenheit. Grease a deep baking sheet (approximately 18″ x 13″).
  2. Then, Beat the egg whites until stiffly beaten with an electric mixer. Set aside.
  3. Beat the egg yolks, water, oil, sugar and salt.
  4. Add flour and baking powder and mix for a further 5 minutes.
  5. Fold in egg whites and place in greased baking tray.
  6. Bake for 20 – 30 minutes.
  7. Allow to cool in the tray and place in the fridge for 2 hours (or overnight). This makes cutting the cake easier.
  8. Use a cookie cutter (roughly 5-6 inches) to cut the cake into 24 circles. The leftover cake can be placed in the freezer and used for cake pops or trifle.
  9. Make sure the circles are level, pipe a circle of icing around the outer edge before placing another cake disc on top, taking care that the cakes don’t lean over.
  10. Finish with a piped decorative icing of your choice. And decorate with sparkly New Year accessories!
